Week 2 starts tomorrow

I made it through the week of 1200 calories a day! YAY! There were a few challenges along the way with our pool party where people brought cupcakes and brownies that looked sooo good, but I resisted. Then, a dance recital where the snack room was open for the kids and their parents, (again...cookies, candy, lots of junk that was tempting!) and not eating carbs at dinner with the fam is actually harder than refraining from sweets sometimes. But it gets easier as time goes on.
I will be weighing in tomorrow, but I think I have lost 2-3 lbs this week. As far as exercise, I did run between 1.4 and 1.8 miles 2x's this week. I also did 30 min of the infared sauna and a detoxing footbath. I also kept more active doing some grout cleaning at home and getting in some pool time with the kiddos. I also did my B-12/fat burner injection Tuesday and I will be getting another one in a couple days.
So here's to week two! First couple days this week will be an improptu camping trip, so I am trying to plan some not-so fattening choices. I hope we do some hiking and calorie burning activities to help me in case I want a smore :) I am also taking my mother in law to lunch at the Country Buffet later in the week, so I really need to have some disipline there too!
I am not going to go to the store today since I still have things left from this past week and my CSA foods will be in tomorrow, so Wednesday I hope to go and get some great sales on fruits and veggies.
A couple things that I made this week that I didn't expect were some brushetta and feta
taco' looking things :) I just wrapped it in turkey lunchmeat. It was really good. I took a picture of that. I really liked the brushetta chicken and cauliflower mashed potatoes this week and even got in a small chili from Wendy's (no cheese). I have not been "hungry" all week. It's all in my head that I WANT certain foods.
Well...hopefully Wednesday I will remember to write down my grocery list. :)

My 1200 calorie count starts tomorrow and I am so prepared!! :) Here are the things I bought to get me through the week!

Wow...it looks like a lot of food :) Here is what I plan on making and sticking to my 1200 calories a day. I plan on sticking to a 250 cal bfast, a 100 cal am snack, a 250 calorie lunch, a 100 calorie pm snack and top it off with a 500 calorie dinner.
Bfasts:
1~Veggie Omlet with Spinach, mushroom, onions, tomatoes (and cheese) with a side of fruit
2~Oatmeal pkt with nuts and a little butter with a side of fruit
3~Whole Grain Waffles with fruit butter
4~Scrambled Eggs with a side of Turkey Bacon and fruit
5~Yogurt, fruit and Granola Parfait
6~Green Smoothie with Spinach, banana, mango and pineapple
7~Oatmeal pkt with nuts and a little butter with a side of fruit
Lunch:
1~Cobb Salad w/ quinoa (cucumber, chickpeas, tomato, avacado, romaine lettuce) w/ light dressing
2~Roasted veggies (potato, onion, mushroom, asparagus, squash, red bell pepper, light butter & garlic salt)
3~Wrap with yogut base ranch. Lunchmeat, veggies and a side of fruit
4~Spinach and Avacado Grilled cheese with a side of fruit
5~Tuna Lettuce Wraps and a side of cottage Cheese
6~Ham and Pineapple Skewars with a side of cottage cheese
7~Spinach Salad with feta cheese and light dressing
Dinners:
1~Cilantro Lime Shrimp Tacos with cabbage, pico de gallo and sour cream. Side of black beans
2~Brushetta Chicken, Cauliflower mashed potates and Broccoli
3~Chili with lean beef, kidney beans, tomatoes, onions. sour cream and cheese. Side Salad w/ light dressing
4~All natural Pork Steaks, mixed squash and diced sweet potatoes
5~Broccoli Salad with sunflower seeds and raw cashew dressing
6~Raw food night with fruits, veggies and raw vegan desserts
7~leftovers...
Snacks:
I have these things available for me to snack on for my 100 calorie snacks
*Fruits
*veggies with hummus
*String cheese
*Nuts
*Fruit Leathers
*Cottage Cheese
*dehydrated apple chips (home made)
*blueberry yogurt bites (home made)
*hard boiled egg whites (I give the yolks to my dog) :)
*Lara Bar or clif bar granola bar

A couple tips I have heard from people that are good words to live/diet by are..."Don't drink your calories" for starters and that is so important. I don't realize how much I drink in calories each day. And Diet Soda is NOT a good low cal option! Did you know that when you combine aspartame and caffine...it kills brain cells. It is not good for you. PLUS...Diet Sodas make you hungry! Imagine that! also...another thing to think about is..."Each day eat things that benefit you and your health! Do something each day that is active and move your body" This is so simple and so true!
Now...with the "My fitness pal" app, once you input your excercise for the day, it will allow you to eat more calories. You start with inputing what your weight is and what your goal weight is when you set up. Then, it tells you how much you should be eating in calories. Then, as you plug in every calorie and the exersises you do...it will change accordingly. I don't plan on eating more than the 1200 calories, even when I exercise, but technically I 'could'...I want some faster results for now. Maybe in the future...that is where I can 'live'. Is still sticking to my 1200 calorie intake and adding when I am more active.

Welcome to accountablility blogging :)

If you are anything like me...you need extra motivation when it comes to diet, exercise,...over all health in general!
I still need to lose my "baby" weight (my "babies" are 5 and 7...I don't even know if I can call it baby weight anymore) :) haha SO...my reason for starting this blog is because it gives me something to make me accountable for the next 30+ days. If I record all the things I have eaten into a blog...it will keep me in check. Plus...if people follow the blog or if I put things on pinterest for all to see...I have an obligation to keep it up, right. :) That's my theory anyway!
I decided that the next 4 weeks, I am going to really buckle down. Not only am I going to eat the 1200 calories a day, but will amp it up on my exercising, detoxing, doing my daily devotion, taking vitamins and getting B-12 shots. So, follow me on my journey and I hope I can be motivation to others and that others can help to motivate me!
Truth is...I have a lot of great tools at my fingertips and have used excuse not to use them. There really is NO excuse anymore! For example...
*I have access to local, fresh, healthy, all natural foods.
*I have access to use a detoxing foot bath and an infrared sauna.
*I have 4 great massage therapists in my family!
*I have a pool that I can swim in to exercise.
*I live in a great "running" neighborhood (and have a really cool 'map my run' app).
*I could be hiking at local mountains.
*I have a gym membership to the local rec center.
*I have friends who are nutrition experts and we often have health food gatherings!
*My family is a great support system
goodness~ what is my problem right?...I CAN do this and I should! I AM! It's not just a "diet", but a lifetime commitment to changing my life for my health! (and in turn...being a good example for my girls to see what health is!!!) I just need to get a kick start!
I downloaded the 'myfitnesspal' app for my phone a while back and I will be putting it to good use! It is a great tool for counting calories! I will try to be eating as many natural, non-processed foods as possible. I try to get organic or pesticide free produce when I can. It is pretty simple for me to get a lot of veggies that way right now since I am part of a CSA ('community supported agriculture', pesticide free, local produce from a small farmer. That is a weekly pick up for me). I also get fresh, local eggs every week as well.
One of my biggest blocks is that I LOVE to entertain and have little gatherings. (and I really love to eat!) You'd be surprised to realize how much food is involved with that and that when you do potlucks, or summer BBQs...there are lots of foods that you eat with out thinking about it. I would like to get to the point where I eat healthy 99% of the time and don't worry about splurging a little at a holiday party, BBQ, birthday outing, etc... But right now... I need to get focused and get myself to that place of little worry.
"Skinny" is a perk, but HEALTHY is what I am going for. I want to make a life style change and have more energy. Being knowledgeable about what you put in your body is a powerful thing.
Anyway..."my diet starts Monday" :) as the saying goes. But really...I will start posting everything I personally eat every day for the next 4 weeks (starting Monday). I will also be inputting what I do for exercise and health that day. My 1st B12 shot is Tuesday and I will be getting some measurements and things as well. (don't think I will be posting those right away, haha). I do plan on running, hiking, swimming, biking, some workout videos, sauna, etc... Mind you I live in Sunny ARIZONA, so the outdoor activities will be EARLY in the morning before the 108 degrees hits :) Except swimming of course!
But with all that...the FOOD is the most important part of it all! As 'they' say...it's 80% diet and 20% exercise! I will post my grocery list tomorrow. I am going to the store today or tomorrow for the week!
